Scholarship Description: The aim of the project is to identify inhibitors of a lectin (carbohydrate binding protein) found in the plant pathogen Ralstonia solanacearum. Phytochemical extracts from food processing waste will be screened for activity towards the lectin. The main objectives of the study are: 1. extraction of phytochemicals from food (mainly fruits and vegetables) processing waste using solvents of variable polarity. 2. Screening of the extracts-lectin inhibition study by NMR spectroscopy. 3. Isolation and identification of the component(s) within the active extract by mass spectrometry techniques. Training will be provided in structural biology (protein expression and purification / NMR spectroscopy), mass spectrometry and various analytical chemistry techniques such extract preparation, chromatography, etc.
